Roasted vegetable spread

I saw this on Good Eats the other day and decided, "I have most of that stuff." I went two ways with it, one with Cannelli bean and the other with low fat cream cheese. Either way, or together would be fine. This is kinda bland but OK.

1 red bell pepper slinced thin
1 medium onion sliced into rings
4 cloves of garlic smashed (I used 8, didn't want the remaining 4 to dry up)
1 zucchini sliced
1 Tablespoon olive oil (one is good, I used more and wasn't pleased)
Kosher salt
black pepper
flavorful soft bread such as challah, foccacia, pita or mini bagels

Preheat to 400 F

place veggies in a mixing bowl add oil and toss to coat. Spread evening onto a sheet pan lined with foil (for easy clean up). Sprinkle with salt, but not the pepper. Roast 45 mintues (mine took an hour) until veggies have a nice brown edge. Remove from oven and cool

Here's where I split:

Take 4 ounces low fat cream cheese (or the real thing) and add half the veggies. Process but not to completely smooth. You gotta have texture. Taste for more salt, but do add pepper to taste.

Alternative, use 1/2 can cannelli beans in place of cream cheese.

I think the 4 oz cream cheese and all the cannelli beans would be fine too, but I'd probably add a touch of lemon juice since the beans tend to bland things down.

I had the bean mixture for a fast meal, Paul got the diary one. Served on fresh mini bagels though I think foccacia would be dyn-no-mite.

I have been on a DIP kick for 2 wks now (made new cheese ball, artichoke dip, crab dip, and mango salsa), and wanted to try one more! We've been eating like a mug in this house, and these ingred. are always ones I have ...including the mini bagels which I bought TODAY!
Actually, the recipe called for a whole block of cream cheese.......8 ounces. Think how much more yummy it would be with all the cheese.......yum, yum.
Sounds delicious and somehow we must convince ourselves that this counts as a serving of veggies. Which, if made with the beans, could. (but we know that cream cheese is one of the triumverate of all good dip bases).

lol, awesome... even more the reason to eat it!!! Veggies for sure tonight!
