Cinnamon Bread
* 2C flour * 1C sugar * 2t baking powder * 1/2t baking soda * 1 1/2t cinnamon * 1 teaspoon salt * 1C buttermilk * 1/4C oil * 2 eggs * 2 t vanilla Topping: * 6T brown sugar * 3t cinnamon * 2T margarine 1. 350. Grease loaf pan. 2. Important not to overmix and to mix dry and wet separately. Combine flour, sugar, baking powder, baking soda, cinnamon, salt. In separate bowl, combine buttermilk, oil, eggs & vanilla. Mix two bowls only until combined. 3. Pour half batter into loaf pan. 4. Topping: Combine topping ingredients and use fork to mix so that it's course. Sprinkle half in middle of loaf. Swirl with knife. 5. Use rest of batter and top with remaining topping. Swirl again with knife. 4. Bake for about 1hr - 1hr 5 min. Test with toothpick. Enjoy! |

I do a really lovely tea loaf, and an all bran loaf i will let you have recipe some time. i need to make this one though, no buttermilk so ordinary? |

YES!! I'm happier for that reason too b/c I've eaten SO MUCH since he got home, but I've actually only lost weight from being so active.
KTB, you can substitute buttermilk with a T of vinegar or lemon juice and then fill rest of cup with milk. It's still not the same though imo. I've made this particular recipe several times. I like things SWEETER, but since this isn't... my husband asks for it. |
| Johayeo, I just made your Cinnamon Bread this morning and it is great. We have had the flu and it is the first I have really felt like baking since New year's, but well worth the effort which was really no effort at all. The ingredients went together well and the house smells so gooooood! What a great treat when it came out of the oven. Only a few minutes elapsed for cooling before we cut into it. With some butter on it, it tasted heavenly! |
