Quick Homemade Granola Bar Snacks!
I made this and a blueberry jello pie that I will post later that I'm so impressed with. Can't wait to show it off to family that's coming in Jan. Took 10 minutes! Lil J gobbled it up this morning with his Ahh Mmm... sounds. Here's a pic of it all individually wrapped and lil J trying to steal one. 
* 2 1/2 C rice crispy cereal * 2 C quick-cooking oats * 2/3 C cranberry & raisin (bag came with mixture of both in the dried fruit section; however, using one or the other works great or a fruit snack mixture) * 2/3 C brown sugar * 2/3 C honey * 2/3 C CRUNCHY peanut butter * 1 t vanilla * 1/8 C pecan pieces (really i just sprinkled a bit in ...not crushed pieces and it was enough to do the job!) 1. In a large bowl, mix rice cereal, fruit, nuts & oats. Then use pam for 9x13 dish. 2. Combine the brown sugar & honey in pot over medium heat until boils. Then take it off the heat and put the pb and vanilla. Mix well with larger bowl. 3. Press into the dish. Says to use back of spoon, but I thought I got further with my hands to make it flat and real tight (to stick together). Probably was about 1.5 inch in thickness. Then I put it in the fridge for an hour, opened, cut in squares, and wrapped each one in plastic wrap. Not sure I'll buy granola bars again! |

Look at those cute little fingers! I made a list of what I'll need to make them tomorrow. Sounds GREAT! I need a quick breakfast most days as I run out the door....  This is MUCH better than the cold pizza I had Friday morning  |

just made this, waited until all xmas stuff gone. 15 year old daughter loves it  For her to like anything is amazing.... giggle.... but like my dogs anything with peanut butter, it has to be good.  |
| Funny because I SWEAR to goodness I'm making it right now so big J has something to eat "in case" something happens in the next few days!
