What to do with pesto?

A co-worker brought me a small container of homemade pesto (basil pesto). I'm not much for pasta, so what else can I do with this?????

I wish you could give it to me. There's nothing better than homemade pesto!

You could try using a small amount as a spread on a sandwich, like a mozzarella and tomato panini kind of thing.
That's what I was going to suggest....Maybe some garlic cheese bread and a "dip" of pesto......yummmmmmmmmmmmmmmmm!!!!!!!!

Back when I waited tables at Friday's, they had the most amazing roasted veggie sandwich. (insert drooling emoticon) It had roasted zucchini, purple onions and red bell peppers that had all been marinated in italian dressing, sun-dried tomatoes, and a thick slab of mozzerella, with pesto mayonaise. For any type of veggie or grilled chicken sandwich, you can add some pesto to a little mayonaise and spread it on the bread.

You could also toss it with some pasta and parmesian cheese and pine nuts, except I guess you don't like pasta. :P You could even put it on homemade pizzas with mozzerella, or use it as a rub/marinate on chicken before you cook it.

You can do a search on any recipe website for "pesto" and it will pull up all kinds of stuff. Have fun cooking! :D
Spread on foccochia, top with LOTS of extra shredded cheese, and pop under the broiler ... or use instead of a tomato-based sauce on anything, pizza, pasta, etc.

My husband's fabulous bruschetta:

Slice a baguette into 1 inch thick slices. Toast under broiler or on grill. Rub both sides with a clove of garlic. Spread pesto (room temperature, well stirred) on the top, top with tomatoes marinated in balsamic vinegar and shredded mozzarella. Place under the broiler to melt cheese.

One of my very favorites and hopefully he'll make it for me tonight.

Ooh, that does sound good!
I can't eat it because it has nuts, but my mom makes a really good (looking) recipe.

Set the oven to broil.

Cut the top off a tomato. Spread the tomato with pesto and parmesan cheese. Broil until top is golden and yummy.

Or, as a similar side dish, you could sautee a bunch of cherry tomatoes and add in the pesto to coat. MMMmmm.

Pesto on top of sliced flank steak is good. Or chicken. Grill some chicken and put the pesto on top (or shrimp)...

By the way, part about the tomatoes - should be "top with tomatoes marinated in balsamic vinegar, and shredded mozzarella. Don't marinate the tomatoes in vinegar and cheese!

Very poor sentence structure there. LOL

That's close to my Italian pizza! You can also mix pesto into bread dough and make a semi-flat bread....pat out into a large circle, let rise an inch or so and bake. (drool)

You can slip pest under the skin of a chicken and roast the bird.
i have also mixed it with a little italian dressing and served it with salad...
Pesto is good anywhere it is!!!! Mashed potatoes, roasted veggies, chicken, sandwich spread, dip pita chips into it....Dab a little behind your ears for attracting nice Italian men.... :lol:
