low(er) carb diet questions--help me please!

Has anyone successfully used a lower carb diet? By successful I guess I mean you could manage to stay on it for an extended period of time? And if so, what did you eat?

I am not trying or wanting to lose weight, but I have a condition where I've heard that a low carb/low GI diet can really help.

My problem is that I don't eat red meat or pork and I don't like eggs really and I am lactose intolerant for the most part and I have nut sensitivity. So that really limits what I can eat.

I just had salmon and roast veggies for lunch and I think I'm going to DIE from hunger. I'm hungrier now than before I ate. The carbs I eat tend to be the healthy ones (whole grains, etc) and I don't eat a ton of them to begin with, but I'm finding it really hard to not have some wheat thins or a whole grain roll to help fill me up...

I generally eat the South Beach diet way...meaning lots of vegies, some protein, 3 whole grain servings a day and up to 3 fruit servings a day. I find that if I make sure I eat enough vegetables a day then I usually don't have a hunger problem. Raw vegies are better than cooked...at least as far as I have noticed. I think because the cooking makes them easier to digest and so you get hungrier earlier.
Nut sensitivity, hehe.

What about tofu? That's usually a love or hate food (that I love) but it tends to be filling (to me). Or how about all your fake meats? I suggest those because some tend to be lower in calories so you can pack more down than regular chicken or turkey. This is not a joke, but in a lot of the refrigerated health sections, I found a fake chicken called, creepily enough, I Can't Believe It's Not Chicken. It's really like a marinated tempeh without being so, textured. It's more chewy, like meat, but not eerily chewy. Anyway, it's great for just eating on its own with veggies or on a salad as well. Fish is tough because even a dense one like salmon doesn't really feel like much so I can understand your starvation.
About 3 years ago I'd been on a low carb diet for 8 months.... Is that long enough? But the results were fast and tremendous.

This is how my meals went
In the morning: apple/orange/grapefruit, plain yogurt. sometimes large glass of milk, sometimes eggs

for lunch
I went to the salad bar.
Romaine Lettuce, mixed greens, onions, chicken breast meat, turkey meat or unmayo-ed tuna, and sprinkles of chedder cheese. No croutons :(
I'd pour one-two table spoon of dressing on the side and dip my fork in it before everybite. My salad was huge... I'd be charged around $6-7
Salad is one thing I never got sick of....
Sometimes I'd have chicken caesar salad with dressing on the side.

I think the key here was to workout immediately after work at 6pm, run on the treadmill for 30-40 min. or attend a workout class at the gym

Dinner: I'd eat broiled salmon/or any other kind of fish, roasted chicken/ crabs, lobster, clams...with tons of string beans, asparagus, carrots, zucchinis, occasionally I'd so out and eat sashimi but there is too much temptation for rice.... I'd eat a whole steamed whole Tofu, put those small orange fish roe and scallion, pepper on them pour some sesame oil and soysauce.


I suggest going for a lot of fish and seafood.
Also Tofu.. I believe there are great fast ways to wok with tofu.
Keep the ideas coming! Any suggestions for snacks?

Jill--Yep, can't handle nuts... :lol: I LOVE tofu. And I like a lot of those soy meat-like foods. I don't think I've seen I Can't Believe It's Not Chicken....although now I really want to, just for the name! I like tempeh--there was a little sandwich shop that we went to in college that had the BEST tempeh sandwiches.

Usually I love salads, but there's a medicine that I'm taking that doesn't seem to mesh well with lettuce, so there's a little problem with that. I guess I'll just have to figure it out as I go along and maybe I'll get used to eating this way and not feel as hungry.
dips and vegies are good for snacks....hummus or anything like that

fruit and cheese...for work I usually just do a mozzerella string cheese stick because it is easy to grab in the morning

I love a cheese stick with my small can of v8 and these all-bran crackers in garlic herb flavor....very filling snack



Is it just lettuce that doesn't mesh with the medication? If so, make a salad with everything but lettuce.

Okay, I've abandoned this! Sad--couldn't even last a day! By dinner I had a headache and was getting shaky and didn't feel well at all. So I'm over it! :D

I'm still going to try and eat fewer carbs but not get rid of them completely (or as much as I was wanting to), especially since I don't need this to lose weight and it's just a theory that it helps my condition...
Good! Now that you gave it up, I'll tell you you're nuts. I couldn't go a day without my carbs. I live on them and I know I'd be miserable, too!
The body NEEDS carbs!!!!!

South Beach is a healthy alternative to low carb, it does limit them. But if you make sure your carbs are COMPLEX, whole grains not white flour you will be eating healthy.

Well, that was one of my objections to trying to do low carb--I feel like carbs are healthy and necessary and I didn't like not having them in my diet. I mostly eat the whole grain, less refined, not white carbs, so I'm already eating healthily to begin with.

I'm just going to try and switch out my daily reduced fat tortilla chips and hummus to veggies and hummus and other little things like that--maybe try to not have crackers with my salads a few days a week.

I know low carb works well for some people, but it's just not for me (and thank goodness I don't need to do a diet like that to lose weight. I would be miserable and would finally know what people are talking about how horrible diets are!).
I have noticed a drastic difference in how I feel when I eliminate "whites" (anything with white flour or white pasta). Thanks goodness there are so many really good whole grain pasta's out there. I actually prefer whole wheat spaghetti to regular.

My biggest problem is SUGAR, I feel so much better when I DON'T eat it but I have a TERRIBLE sweet tooth and can't do it for very long :(
What about eating dark chocolate when you feel the need for something sweet? You can't have a ton of it since it's kind of bitter, but it satisfies the choco craving for me, with just a little bit, and it has antioxidants!

Yeah, sugar is a big one for me, too. I usually eat naturally fat free candies (like gummy bears or jelly beans or now--candy corn!!) but they have so much sugar and calories.

I'm an addict. Actually I am a sugar addict which since I tend toward hypoglycemia is a terrible things. The sugar ZOOMS your blood glucose up then drops it like a rock!!!!!!!!!!!!!!!!!!!!!!!!!

I was told this happens for about 4 days(by a doctor) and then goes away. Alot of people can not get pass this.

In the end they always say a well balance meal and portions. Healthy snacks. Sounds easy :cry:

The healthy snacks and well balanced meals are pretty easy for me. I would much rather have a salad than a burger...so that part works out well for me!
