Looking through recipes they all just roast it for about an hour. In every case they season it first however they want, from putting in garlic slivers to browing the outside and then adding a basting sauce. Every one suggest slicing thinly which makes me think it might be tough if thick sliced.......hmmmm.
My vote is a crock pot on low for 8 hrs - or whatever depending on the size. A nice med rare and slice thin. Should turn out moist and tender.
In the oven?
I needed a bigger crock pot for church so got the 6 qt. Noticed in the recipe book cooking roasts remembering to line the bottom and sides with veggies for moisture. Can't wait to try that!
