Don't worry, my dogs did the same thing, you can't really stop them unless you watch them. If I saw them do it, I would tell them no, but they do grow out of it, make sure your dog has plenty of water.
Puppies and some adult dogs will do this. Here's a like that might help to explain-

The best way to prevent it is to clean it up immediately after they go. It's the
out of sight, out of mind thing... and out of mouth too! Making the
correction to "leave it" or whatever you choose to say, is also a good way to
train her that the behavior is not okay.
My poodle did the same thing BUT with cat poop  Now hardly ever, BUTTT still can. When she was a pup it was hard to teach her that it was bad. Why they do it ?
I agree that the best advice is PICK IT UP IMMEDIAATELY

With all the powders, etc... what works for my maltese is to give her a treat after she goes. A treat worthy of not eating poop. It took several failed attempts with not so good to her treats to find the perfect one, but now she leaves it in her litterbox b/c she's dying for a good treat!! This also means when training that you have to be RIGHT BEHIND THEM to make sure they don't eat it!

they can do it out of boredom, missing something in their diet, habit, and I'm sure a few other reasons.

I think kitty litter is a bit different than their own poo. Someone once told me that a dog who isn't getting sufficient nutrition may eat their own poop (I have no idea if there is any validity behind this though). However, I think it's common for a dog to want to eat kitty poo, but it's gross. I always figured dogs found kitty poo as a "treat" -- but it's gross, and at least with an OES you can always tell when they've been in the litter box because it clumps in their beards.
