What's white chili?  |
| White chili is basically a chicken base chili with white beans instead of pintos or kidney beans. Seasoning is about the same, use serrano or jalepenos for the heat. Think chicken stew or hearty chicken soup with a kick. Actually it's very good.

| This white chili recipe is a bit different what with the ginger, cinnamon. Normally they along with the bay leaf and tomato are not added. Cumin and coriander are optinal too, but common to many chilis.
1 teaspoon olive oil 1 cup chopped onions 1 clove garlic, mined 1 teaspoon ginger root, minced 1/2 to 1 jalapeno chili, finely chopped 2 cups mushrooms, quartered 1 tablespoon flour 1 pound boneless, skinless chicken breast, cubed 2 (15 ounce cans) cans white beans (Great Northern, navy, lima, etc.), drained 1 (14 1/2 ounce) can reduced-sodium chicken broth 1 teaspoon dried oregano leaves 1 teaspoon ground cumin 1/2 teaspoon ground coriander 1/4 teaspoon ground cinnamon 1 bay leaf 1 small tomato, chopped 2 green onions, thinly sliced 2 tablespoons finely chopped cilantro Heat oil in a a large saucepan over medium heat until hot. Add chopped onion, garlic, gingerroot and jalapeno chili and cook for 5 minutes. Add mushrooms, cook, covered, until mushrooms are soft, about 5 minutes. Stir in flour; cook 1 minute longer. Add chicken, beans, chicken broth and herbs and heat to boiling. Reduce heat and simmer, covered, until vegetables are tender and chicken is cooked, 10 to 15 minutes. Discard bay leaf; season with salt and white pepper to taste. Spoon chili into bowls and top with tomato, green onion and cilantro. Makes 4 servings Serving Size: 12 ounces |
| I've never heard of it, but it sounds very good.
I always use several kinds of beans when I make chili. I make two pots because 3 of us in the house don't like meat, and 3 do. So I make one with hamburger, and one without, but it has more veggies (celery, bigger chunks of onions, mushrooms, green peppers, and at least 3 kinds of beans... usually red kidney, white kidney, navy and pinto) |

How can there not be any chile in your chili recipe? I'm guessing you changed it to jalapenos for all these non-new mexicans. |
 SSSShhhhhhh! Remember the crop got damaged this year in all the rain. We don't want others taking our green chile, sssshhhh!
Personally, I'd make this recipe with plenty of green chile, no jalepanos or those sweet spices. In fact I do quite often through the winter, but I'd never call it chili. To me it's just green chile chicken soup, a close relative of green chile which can have anyone of several different meats as the base. Throw in some carrots and potatoes and it becomes green chile stew.........oh, I'm hungry now. Next you'll mention green chile cheese burgers.............. s. |

I love just about anything with green chili's in them...yum...I make a great pork green chili....but now that ive run out of my stash of Hatch green chilis....it wont taste the same  |
